A cheese sandwich is delicious. A toasted cheese sandwich is EVEN better. And a toasted cheese sandwich with Spam is just next-level! The Spam brings a salty, umami hit that you never knew the humble grilled cheese needed, while the mix of Jarlsberg and Cheddar creates the perfect meltiness and sharp flavour you expect from a classic toastie.

If you fancy making more of a meal of it, we'd recommend this one dipped into tangy tomato soup, or served alongside a mustardy green salad with pickled shallots.

Yields: 2

Prep Time: 10 mins

Process Time: 4 mins

Total Time: 14 mins

  • 200 g

Spam, sliced into 4 even slices

  • 100 g

    Jarlsberg cheese, grated

  • 100 g

    Cheddar cheese, grated

  • 1 tsp.

    vegetable oil

  • 4

    slices white sourdough bread

  • 4 tsp.

  1. Place a large frying pan on a medium heat and add the oil. Once hot, add the spam and fry for 3 minutes on each side until golden and crisp. Remove the Spam from the pan and set aside, then wipe the pan with a piece of kitchen towel.
  2. Sprinkle half the cheese across two slices of the bread, place the Spam on top of the cheese, then cover with the other half. Sandwich the remaining slices of bread on top and press down slightly.
  3. Spoon on one teaspoon of mayonnaise on each upward facing slice of bread and spread evenly. Place both sandwiches mayo side-down in the pan, then repeat the mayonnaise process on the upward facing slices. Put the lid on the pan and fry for 2 minutes.
  4. After 2 minutes, remove the lid of the pan and use a fish slice to flip the sandwiches. Fry for a further minute with the lid on.
  5. Remove your sandwiches from the pan, slice open and dig in.
