THIS IS THE YEAR YOU MAKE CHERRY JAM FROM SCRATCH

Cherry season is always too short, so we love preserving them a little longer with this jam. Almond + cherry flavour is a classic, which is why we like adding a splash of amaretto liqueur for a hint of almond flavour.

Ingredients

  • 900 g

    cherries, pitted and roughly chopped

  • 300 g

    caster sugar

  • Pinch of salt

  • 2 tbsp.

    amaretto liqueur (optional)

Directions

  1. In a small saucepan over medium heat, combine cherries, sugar, salt, and 1 tablespoon cold water.
  2. Bring mixture up to a simmer and cook, stirring occasionally, until cherries begin to break down, 12 to 15 minutes.
  3. If using, add amaretto and continue to cook until mixture has thickened and leaves a trail behind your spoon when you stir, about 10 minutes more.
  4. When jam has thickened and reached 105°C, remove from heat and transfer to a clean glass jar. Let cool completely before covering and refrigerating.
