THIS EASY ROASTED COURGETTE IS THE HEALTHY SIDE YOU'VE BEEN LOOKING FOR

When it comes to roasted veggies, courgette is one of our favourites. First of all, it's FAST! (No shade, roasted beets.) Courgette gets tender in no time at all, so make sure to start checking them early to ensure they're not turning to complete mush.

Secondly, it's versatile! Feel free to swap in your favourite spices and herbs or keep it simple with salt and pepper. Roasted courgette is basically a blank canvas for your favourite savoury flavours, so don't shy away from your faves.

Ingredients

  • 4

    courgette, quartered lengthwise

  • 1 tbsp.

    extra-virgin olive oil

  • 2

    cloves garlic, thinly sliced

  • 2 tsp.

    fresh thyme, chopped

  • Pinch chilli flakes

  • Salt

  • Freshly ground black pepper

  • Zest of 1 lemon

  • Lemon wedges, for serving

Directions

  1. Preheat the oven to 190°C (170ºC fan). Combine courgette, oil, garlic, thyme, and chilli flakes on a large sheet tray. Season with salt and pepper and use your hands to toss courgette until they are coated in oil and spices.
  2. Roast until courgette is tender and slightly golden, 13-15 minutes.
  3. When courgette is tender, toss with lemon zest and serve with lemon wedges on the side.
