THIS EASY BOURBON-PLUM JAM IS HERE TO UPGRADE YOUR BREAKFAST

When it's peak summer, and plums are ripe and juicy, we love making this ultra simple jam. Amazing on toast, swirled into yogurt, or atop a bowl of porridge, its bright flavour improves pretty much anything it touches. We can't get enough of it.

Ingredients

  • 900 g

    ripe plums, pitted and roughly chopped

  • 135 g

    caster sugar

  • 2 tbsp.

    bourbon (optional)

Directions

  1. Combine plums and sugar in a large bowl. Toss fruit to coat in sugar and let sit until sugar is mostly dissolved, 30 to 35 minutes.
  2. Transfer fruit to a medium sauce pan over medium heat. Bring mixture to a boil, then reduce to a simmer and cook until an instant read thermometer reads 100°C, about 30 minutes. Use a potato masher to break down plums if you prefer a smoother jam. Remove from heat and stir in bourbon, if using.
  3. Transfer jam to jars and let cool completely before refrigerating.
