When it's peak summer, and plums are ripe and juicy, we love making this ultra simple jam. Amazing on toast, swirled into yogurt, or atop a bowl of porridge, its bright flavour improves pretty much anything it touches. We can't get enough of it.

- Combine plums and sugar in a large bowl. Toss fruit to coat in sugar and let sit until sugar is mostly dissolved, 30 to 35 minutes.
- Transfer fruit to a medium sauce pan over medium heat. Bring mixture to a boil, then reduce to a simmer and cook until an instant read thermometer reads 100°C, about 30 minutes. Use a potato masher to break down plums if you prefer a smoother jam. Remove from heat and stir in bourbon, if using.
- Transfer jam to jars and let cool completely before refrigerating.
